The solera and criadera method

 

The Solera and Criadera method is unique and typical for Jerez. It is a very important component in the maturing process and consists of a controlled blending of young and aged vinegar, all of which are of similar character.

The oldest component is held in the "Solera", the bottom row of oak barrels. From it, from time to time, the desired quantity is drawn for bottling, but never more than a third of its content. The removed quantity is replaced with somewhat younger vinegar from the "first Criadera", the row of barrels stored above in the Solera. Then, the void in the "first Criadera" is replenished with still younger vinegar from the "second Criadera" located one further step above, the "second" with vinegar from the "third" and so on. Depending on desired age and quality, this process may be shortened or extended, which has the advantage that a consistent quality of all our products can be obtained.

Of equal importance is the use of barrels previously utilized for the storage of sherry wine, since the oak absorbs the aroma of the sherry and later releases it into the vinegar.
