Our bodegas


Bodegas are the typical above ground, large storage facilities, which dominate the city-scape of Jerez de la Frontera. The thick stone walls, shielding the building from the extreme summer heat, as well as the columns and arches, resemble the interior of a church. The floor of sandy soil, called "Albero" (also used in bull fight arenas) is dampened as required to provide constant temperatures and humidity.


BODEGA MENDOZA

Located in the historic centre of Jerez and only accessible through the very narrow streets of this oldest part of town, this Bodega is the largest and probably the only one that has been used exclusively for the storage and maturing of sherry vinegar. To this day it contains the oldest Soleras, their beginning traceable to the year 1923 by the previous owners, the O’Neale Family. At present it contains 1.100 barrels with approximately 550.000 l of Sherry Vinegar Reserva.

For us it is clear: This is "THE CATHEDRAL OF SHERRY VINEGAR".

BODEGA SERRANA

This bodega was previously used for the storage of Oloroso. It is a very attractive building with high columns and wooden roof trusses. Here we are using 1.200 old barrels for the aging of 600.000 l of our younger vintages.

BODEGAS DIOS BACO

Our bottling and shipping facilities are located here, as well as our laboratary, which employs modern equipment and methods to assure constant quality control. At the present time we are preparing for a considerable expansion of this production centre, to keep up with the steadily growing demand for our products.
