| The basis for our vinegar is the much appreciated sherry, namely
the varieties of Fino and Oloroso, which are derived from the "Palomino" and,
for some specialties also the " Pedro Ximenez" grapes. Immediately after the harvest the juices from the first pressing areseparated, for making the finest wines, generally known as "Vinos de Yema". This popular synonym for "Top Quality" became the basis for our company name, VINAGRES DE YEMA, with which we also guarantee our products to be of the very best quality. The warm micro climate around the area of Jerez, located in the extreme South of Spain, provides the necessary components for the aging process. The heat and the salty breezes from the Atlantic ocean enhance the maturing of the wine as well as of the vinegar. What once was an undesirable mishap in the early days of wine making became a targeted and controlled procedure today. The fermentation through oxidation in stainless steel tanks and the maturing in oak barrels over several years produce the exceptional quality. |
